RISOTTO (Rice) 
1 c. rice
4 c. chicken broth
2 cloves garlic put through garlic press
1/2 sm. onion, minced
1/4 lb. mushrooms, sliced
Salt and pepper to taste
1/2 c. butter

Brown rice in butter (slowly). When almost even in color add onion and garlic and saute together. Then add chicken broth. Stir occasionally (with lid) when cooking, about 10 minutes. Add mushrooms and cook until rice is done and broth is evaporated. May be served with chicken and vegetables. Serves 4.
