RON'S SPAMBALAYA 
This one skillet meal is best made in a 10-inch cast iron skillet. My daughter does not like Spam but will eat 2 bowls every time I make it, even after she found out it was Spam!

1 (12 oz.) can Spam Classic (cut into 1/2-inch cubes)
1 (10 oz.) can Rotel tomatoes
1 cup instant rice (Minute Rice)
2 cans water (use empty Rotel can)
1 small onion, coarsely chopped
1 (6 oz.) can tomato paste
1 tsp. onion powder
1 tsp. garlic powder (or 2 cloves; crushed and minced)
3 drops liquid crab boil (Zatarain's; not optional)
1/4 cup chopped bell pepper (optional)
1/4 cup chopped celery (optional)
1/2 tsp. hot sauce (optional)

Brown Spam on medium heat until done on three sides, add onions with the Spam and sauté till translucent. Drain off excess fat. Add onion and garlic powder. Stir well. Drain and add Rotel, water and tomato paste. Add optional ingredients at this stage. Bring to a boil for 2 to 5 minutes.

Add crab boil, Stir well. Reduce heat to low, let simmer 5 for 10 minutes.

Float instant rice on top and cover. After 2 to 5 minutes, turn heat off and let stand for 10 minutes.

Makes 4 to 6 servings with a side dish or 2 to 3 as a standalone meal.

Unfortunately I never have any leftovers for work the next day. Bon Appetit!

Variation: May substitute Spam for 1 pound chopped ham or Italian sausage.
