CHICKEN PAPRIKA | |
1 chicken, cut up Salt and freshly ground black pepper 2 tbsp. butter 1 c. thinly sliced onions 1 tbsp. finely minced garlic 2 tbsp. sweet Hungarian paprika 1 c. fresh or canned chicken broth 1 - 1 1/2 c. sour cream 1 tbsp. flour 1. Sprinkle chicken with salt and pepper to taste. 2. Heat butter in heavy skillet and add the chicken, skin side down. Cook over moderately high heat about 5 minutes and turn the pieces. Continue cooking about 5 more minutes until brown on second side. 3. Sprinkle the onions and garlic around chicken. Add paprika and stir. Add broth and cover. Let simmer 10 minutes or longer until chicken is done. 4. Remove the chicken to a warm serving dish. 5. Blend sour cream and flour and stir into the sauce. Cook stirring about 1 minute. Pour sauce over chicken. Serve with egg noodles. |
