MEATBALL STEW 
2 lbs. ground beef or turkey
1 c. soft bread crumbs
1/2 c. milk
1/2 c. chopped onions
2 tsp. salt
2 tbsp. salad oil
1 (16 oz.) can corn
3 tomatoes, peeled & chopped
1 lb. fresh string beans, cut 1 1/2"
3/4 c. beef broth
1/4 c. chopped parsley
1/4 tsp. pepper
1/2 tsp. dried leaf thyme

In a large bowl mix meat, bread crumbs, milk, onion, 1 teaspoon salt and shape into small meatballs. Heat oil in a large Dutch oven. Add meatballs, brown on all sides. Remove from Dutch oven. Put corn, tomatoes, green beans, beef broth, parsley and remaining salt. Add meatballs. Bring to boil, cover, reduce heat and simmer 40 minutes, until vegetables are cooked. Makes 8 servings.
