JEFF'S BAKED HADDOCK 
2 (1 lb. ea.) haddock fillets
1 1/2 cups (3 sticks) butter, melted

TOPPING:

parsley flakes
pinch of salt
freshly ground pepper, to taste
garlic powder, to taste (optional)
cracker crumbs or bread crumbs
bacon bits (Hormel)

Preheat oven to 350°F.

Place haddock fillets in roasting pan. Pour melted butter over fillets.

Sprinkle parsley flakes, salt and pepper over haddock. Sprinkle garlic powder, if using. Sprinkle cracker crumbs or bread crumbs over haddock. Finally, sprinkle bacon bits.

Add a little water to the pan and cover with a lid or foil.

Bake at 350°F for 35 to 45 minutes.

Serves 4 to 6.
