NEW ORLEANS - STYLE SCAMPI 
2 lb. unpeeled jumbo fresh shrimp
3/4 c. butter
1/2 c. fresh lemon juice
1 tbsp. finely chopped shallot or green onions
1 1/2 tsp. finely chopped fresh parsley
2 lg. cloves garlic, crushed
1 tsp. salt
Dash of hot sauce
1/2 tsp. paprika

Peel and devein shrimp, leaving tails intact; set shrimp aside.

Melt butter in a small saucepan over low heat. Add lemon juice and next 5 ingredients; stir well to combine.

Arrange shrimp in a single layer in a shallow baking pan. Brush shrimp with butter mixture, sprinkle with paprika. Broil 6 inches from heat 5 to 6 minutes or until shrimp turn pink, basting frequently with butter mixture. Serve immediately.

Yield: 6 servings.
