SHRIMP CURRY 
3 tbsp. butter
2 med. onions, minced
1/2 c. diced celery
3 tbsp. flour
1 1/2 tbsp. curry powder
1/8 tsp. cloves
1/8 tsp. allspice
1/4 tsp. oregano
1/8 tsp. cayenne pepper
1 1/2 c. water
1 tsp. salt
1/2 lemon (juice and grated rind)
1 1/2 c. chicken bouillon
2 c. cleaned, cooked shrimp
Condiments: chopped peanuts, toasted coconut, bacon bits, chopped hard-cooked egg, chutney

Melt butter, add onions and celery, cook until golden brown. Mix flour and dry seasonings and add to above mixture. Blend well. Combine lemon juice, rind, bouillon and water. Add slowly and stir well. When thoroughly combined cover and let simmer for 30 minutes. Add shrimp and heat thoroughly. Add more salt if needed and serve over rice. Sprinkle desired condiments on top. Serves 6.
