ENCHILADAS 
1 lg. onion, chopped
2 lbs. Velveeta cheese
1 lb. Longhorn cheese
1 pkg. burrito size tortillas (flour)
1 stick butter
2 or 3 jalapeno peppers, chopped
1 med. size jar pimentos, chopped
3 or 4 c. milk
1 1/2 lbs. ground beef

Season (salt and pepper) ground beef and onions in skillet, cook until onions are transparent, set aside. In Dutch oven combine, milk, butter, Jalapeno peppers, pimentos and 3/4 of the Velveeta cheese, chopped. Cook until all cheese is melted. Add floured milk to thicken (mix flour and milk in separate dish, then add to sauce). Grate Longhorn cheese. Line up tortillas in a large cake pan. Fill with 1 spoon ground beef, top with Longhorn cheese, add 2 spoons, sauce, close tortillas. Add remaining sauce over filled tortillas. Bake at 350 degrees for 20 minutes.
