HONEY CAKE 
3 c. sifted flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 c. granulated sugar
1 c. boiling coffee
2 tbsp. chopped nuts (if desired)
1 tsp. baking soda
1 tsp. ginger
1 tsp. nutmeg
3 eggs
1 c. honey
2 tbsp. oil or melted shortening

Sift flour once. Measure and sift a second time with baking powder, baking soda, spices and salt.

Beat eggs until thick and lemon colored, about 5 minutes. Gradually add sugar to eggswhile continuing to beat.

Add honey, coffee and shortening; blend well. Add dry ingredients and beat until blended.

Sprinkle nuts evenly over the bottom of a greased and wax paper lined 9x13-inch pan. Transfer back to pan.

Bake at 375°F for 35 to 40 minutes or a toothpick inserted in center comes out clean.

Cool in pan for 5 minutes, then turn out onto wire rack.

Cut into squares.

Yield: 24 servings.
