ESCOVEITCHED FISH 
2-3 lbs. fish, any kind
1 lg. onion
1 hot pepper
1 c. vinegar
Pinch of salt
Oil to fry

Wash and soak fish in a little salt and water, for about half an hour. Drain and dry with paper towel. Fry in deep fat, very hot. Drain on paper towel, then set aside on a platter. In a saucepan pour vinegar, onion and pepper and bring to a boil. When vinegar is cool, pour over fried fish.
