PORK VINDALOO 
2 pounds pork meat (with a little of bit fat)
4 tablespoons Goan Vindaloo Masala paste
2 tablespoons salt
2 tablespoons seasoned vinegar
1 tablespoon fresh garlic paste
1 tablespoon fresh ginger paste
1 tablespoon sugar
2 medium onions cut finely
1 cup water
additional salt, to taste

Cut the Pork Meat into 2-inch cubes. Apply salt, seasoned vinegar, ginger, garlic, Vindaloo paste and sugar; marinate overnight. Add 3 tablespoons of oil and sauté the onions until slightly brown. Add the marinated meat and sauté for 3 to 5 minutes. Add a cup of water and salt to taste. Then cover and simmer gently, stirring occasionally, until pork is cooked through (about 40 minutes).

It is served with steamed rice cakes called Sanam. But you can serve it with plain rice, Pulao or French bread (the chewiness is similar to the Pao (Bread) that is made in Goa).
