TOMATOES AND POTATOES 
2 lbs. potatoes, peeled
1/2 c. olive oil
2 onions, chopped
2 tsp. salt
Pepper
A few bay leaves
1 lb. tomatoes, chopped
4 cloves garlic, finely chopped
2 tsp. basil
2 c. water or stock

Wash potatoes, cut in small pieces. Heat oil in large skillet; fry onion for about 2 minutes; add potatoes, sprinkle with salt and pepper. Add bay leaves. Fry together 2 minutes, add tomatoes, garlic and basil. Pour liquid in pan, cover and cook over gentle heat until potatoes are done.
