TACO CHICKEN 
1/4 c. flour
1 (1 1/4 oz.) pkg. taco seasoning
16 (4 lbs.) chicken breasts, skinned
1/4 c. butter
1 c. tortilla chips

SAUCE:

1 tbsp. cooking oil
2 tbsp. onion
2 tbsp. flour
1/4 tsp. salt
13 oz. can evaporated milk
1/4 tsp. Tabasco sauce
1 c. Monterey Jack cheese

Shake chicken pieces in a mixture of flour and taco seasoning. Melt butter in a 10x15 inch pan. Turn chicken in butter and then in the crushed taco chips. Bake at 375 degrees for 45 minutes. Serve with sauce spooned over chicken.

SAUCE: Cook onions in oil, then add rest of ingredients. Cook until thick and add Monterey Jack cheese or 1/4 cup sliced olives and 1 tablespoon lemon juice. DO NOT BOIL!
