TURTLE SOUP 
1 1/2 c. chopped fresh turtle meat
2 qt. beef stock
1 bay leaf
1 1/2 tbsp. lemon juice
1 clove mace
Few drops hot sauce
Salt & pepper
2 hard cooked egg whites, chopped

Combine turtle meat, stock, bay leaf, mace, lemon juice and hot sauce. Bring to a boil, then simmer until turtle is tender. Remove bay leaf and mace. Season with salt and pepper. Add 1 tablespoon sherry to each serving if desired. Garnish with chopped egg white. Makes 8 servings.
