FRIED APPLE PIES 
4 med. size cooking apples, peeled and sliced
1/2 c. sugar
1/4 tsp. ground allspice
Pastry (recipe follows)
Vegetable oil

Place apples in a saucepan with a small amount of water. Cook over medium heat, stirring occasionally, about 20 minutes or until tender. Drain well. mash slightly, and measure 2 1/3 cups apples, reserving remaining apples for other uses. Combine apples, sugar, and allspice, stirring well. Set aside.

Divide pastry into 7 portions; roll each portion into a 7 inch circle. Spoon 1/3 cup apple mixture on half of each circle. Fold circles in half; press edges together with a fork dipped in flour. Fry pies immediately after filling.

Heat 1/2 inch of oil in a large skillet over medium high heat. Cook pies, two at a time, until golden, turning once; drain on paper towels. Yield: 7 inch pies.

PASTRY:

1/3 c. shortening
2 c. self rising flour
2/3 c. cold water

Cut shortening into flour until mixture resembles coarse meal. Sprinkle water (1 tablespoon at a time) evenly over surface; stir with a fork until all ingredients are moistened. Shape into a ball. Yield: enough pastry for 7 (7 inch) pies.
