1 c. wild rice 1 c. white rice 1 each red, green, yellow pepper 1 c. peas 1 c. diced chicken 3/4 c. celery Chives or onions (optional) Eggs, tomatoes (chopped) or lettuce (optional) VINEGAR & OLIVE OIL DRESSING: 1/4 c. white wine vinegar 1 tbsp. salad or peanut oil or canola 1 tsp. basil 1 tsp. lemon juice 1/4 tsp. salt Mix, refrigerate and serve. Leftovers can be served warm. |
