HEART SMART BUTTERSCOTCH
BROWNIES
 
1/2 c. oil
1/4 c. Egg Beaters
1 tsp. baking powder
1/2 tsp. vanilla
1 c. light brown sugar, packed
3/4 c. sifted flour
1/2 tsp. salt
1/2 c. walnuts

Preheat oven to 350 degrees. Blend oil and sugar. Stir in Egg Beaters. Sift flour, baking powder and salt together and combine with egg mixture. Add vanilla and walnuts to batter. Spread in an oiled 8"x8"x2" pan. Bake for 25 minutes. DO NOT OVERBAKE. Cool slightly and cut into squares.
