BANANAS FOSTER 
1 lg. ripe, firm banana, peeled
Juice of 1 lemon
2 tbsp. brown sugar
Dash cinnamon
1/2 oz. banana liqueur
1 oz. white rum

Slice banana in half lengthwise. Brush with juice. Melt sugar and butter together in a chafing dish. Add bananas; saute until tender. Sprinkle with cinnamon. Pour liqueur on top and flame with the 1 ounce of white rum, basting with the warm liquid until the flame burns out. Serve immediately over vanilla ice cream. Serves 2.
