TOO PIOUS PANCAKES | |
2 lg. eggs 2 tbsp. oil 1 c. milk 1 c. buttermilk 2 c. flour 1 tbsp. white cornmeal 1 tsp. buckwheat flour 2 tsp. baking powder (make sure it is fresh) 1 tsp. salt In a small mixing bowl, combine eggs, oil, milk and buttermilk. In a large mixing bowl, combine remaining ingredients. Pour the wet mixture into the dry and stir only enough to mix. Mixture should be lumpy, not smooth. Stir no more! Spoon onto greased, hot (400 degrees) griddle. Turn when center bubbles break. Best served hot with lots of whatever you call butter and maple syrup that has been warmed in the microwave oven. Cook all the batter and microwave it later or feed the birds. Makes about a dozen. |
