SOUTHERN STYLE JAMBALAYA 
1/2 lb. boned chicken breasts, cut into pieces
2 tbsp. butter
12 oz. kielbasa, sliced
1 sm. green pepper, diced
1 stalk celery, diced
1 sm. onion, diced
1 (14 1/2 oz.) can stewed tomatoes
1/2 c. water
1 1/2 c. Minute rice
1/2 tsp. salt
1/2 tsp. hot pepper sauce

Cook chicken in butter until lightly browned. Add kielbasa, green pepper, onion and celery. Cook until vegetables are just tender. Add tomatoes and water. Bring to a boil. Stir in remaining ingredients. Cover and remove from heat. Let stand for 5 minutes. Fluff with a fork and serve.
