3 qts. water 1 onion, diced 3 cloves garlic or 1 tsp. garlic powder 3 tbsp. oil 3 tbsp. flour Red pepper to taste 2 lbs. smoked sausage, sliced 2 lbs. peeled deveined shrimp 1 cooked, cut up, skinned chicken or 1/2 lg. turkey breast, cut up 1 1/2 lbs. fresh cut up okra 1 pt. cut up tomatoes Make dark roux of oil and flour, stirring constantly. Add onion and okra. Continue stirring and cooking until okra falls apart. Add tomatoes, red pepper, and garlic. Next, put in chicken and sausage. Stir together. Add water (may need to add more water). Cook 2 hours, stirring occasionally, on low heat. Add peeled shrimp. Cook 20 minutes and serve over hot rice. Add file in bowl. Do not reheat with file in it. Serve with crackers. |
