WHOLE WHEAT ZUCCHINI BREAD 
1 1/2 c. all purpose flour
3/4 c. packed light brown sugar
1 tsp. salt
1 1/4 c. shredded zucchini
1 egg
1/4 c. oil
1 1/2 c. whole wheat flour
4 tsp. baking powder
1 tsp. cinnamon
1/2 - 1 c. raisins (opt.)
1 1/4 c. milk

In large bowl, mix flours, sugar, baking powder, salt and cinnamon. Stir in zucchini and raisins. Set aside.

In small bowl, beat egg, milk and oil just to blend. Pour over flour mixture, stir just until moistened. Turn into greased 9"x5"x3" pan. Bake at 350 degrees about 60 to 70 minutes, until pick inserted in center comes out clean. Cool in pan for 10 minutes, invert on rack to cool.
