EASY PUMPKIN COOKIES 
1 pkg. yellow cake mix (or a spice cake mix)
1 (16 oz.) can of canned pumpkin (Libby's)
1 (10 oz.) pkg. cinnamon chips (Hershey's; these are seasonal and if they cannot be found use the spice cake mix)

Preheat oven to 350°F.

Mix together cake mix and pumpkin, add the cinnamon chips and drop on a greased cookie sheet.

Bake at 350°F for about 10 minutes or until cookie is set.

Note: I have made this recipe into muffins and bread, but remember to use the spice cake if you cannot find the cinnamon chips, depending on how much spice you like you can add some pumpkin pie spice.

I ice these with a simple store bought cream cheese frosting.
