GOLDEN RICE SALAD (LOW CALORIE) 
1 bag rice
2 hard-cooked eggs
1 c. diced celery
1/4 c. sliced green onion
1/4 c. diced dill pickle
1/2 c. mayonnaise
3/4 tsp. salt

Cook bag of rice according to the package directions. Drain, empty into mixing bowl and cool. Add remaining ingredients and toss lightly. Serve in lettuce and garnish with green olives, tomato wedges or radish roses. Stuffed olives may be used instead of pickle. Makes 6 servings.
