CREOLE CORN MUFFINS 
2 eggs
1 1/2 c. milk
3/4 c. shortening
2 1/2 c. flour
1 tsp. salt
2 tbsp. baking powder
4 tbsp. sugar
4 1/2 tbsp. yellow corn meal
2 tbsp. chopped green pepper
2 tbsp. onion
2 tbsp. chopped pimento
3/4 c. grated Cheddar cheese

Blend egg, milk and shortening together. Set aside. Combine flour, salt, baking powder, sugar and cornmeal in mixing bowl. Add green pepper, onion, pimento and cheese to cornmeal mixture, stirring just until mixed. Pour milk mixture into corn meal mixture, stirring just mixed. Pour batter into hot greased muffin pans 2/3 full. Bake at 400 degrees for 25-30 minutes. Yield 9-12 muffins.
