SCOTTISH SHORTBREAD 
2 c. butter, softened
1 c. sugar
5 c. unsifted all-purpose flour

Preheat oven to 275 degrees. Grease four 8-inch round cake pans or 1 large pizza pan.

In a large mixing bowl with electric mixer at medium speed. Cream butter and sugar until fluffy. Beat in flour, 1 cup at a time, until well mixed. Divide dough into 4 equal pieces. Pat evenly into bottom of pans.

With tines of fork, prick dough all over to prevent bubbles from forming during baking. Bake for 1 hour or until pale and golden. Do not allow to brown. Cool in pan for 10 minutes, remove from pans and cut into 8 wedges.
