LEMON FRUIT SALAD | |
Assorted fresh fruits of your choice (apples, peaches, pears, kiwi, strawberries, grapes, cantaloupe all work well) 1 sm. pkg. (3.4 oz.) lemon instant pudding mix 1 (20 oz.) can crushed pineapple (do not drain) 1/2 to 1 c. pecan halves or pieces Cut fruit into bite size pieces and place in large serving bowl. Add crushed pineapple with juice and pudding mix to fruit, stir until pudding is dissolved. Fold pecans into fruit mixture. Cover, chill, and serve. (Pudding is not meant to thicken as usual, but instead creates a sauce when mixed with the juice from the pineapple.) |
