LEMON WAFERS 
1 1/2 c. sifted flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. shortening
1 1/2 tsp. grated lemon peel
1 1/2 tsp. lemon juice
1 c. firmly packed brown sugar
1 egg

Sift dry ingredients together. Cream shortening, peel and juice together. Add sugar gradually; beat well, then add egg, blending after each addition. Add dry ingredients, half at a time. Shape into rolls and wrap in waxed paper. Chill several hours or overnight. Slice into thin slices and bake at 400 degrees for 8 to 10 minutes. If dough becomes too soft to slice, place dough back in refrigerator to chill again. Remove cookies immediately to wire racks to cool. About 4 dozen cookies.
