SWEET POTATO PUDDING 
2 c. finely grated raw sweet potato
1 c. milk
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. salt
1 c. firmly packed brown sugar
1/2 stick butter, melted
2 eggs, lightly beaten

Preheat oven to 350 degrees. Grease a 6 cup casserole. Mix sweet potato, milk, spices and salt. Beat together brown sugar and butter. Beat in sweet potato mixture. Beat in eggs. Turn into greased casserole. Bake until set in center and browned on top, about 1 hour. Makes 6 servings.
