STANDING RIB ROAST 
1 (6-8 lb.) standing rib roast
1/2 to 1 tsp. black pepper

Roast must be at room temperature before cooking. Preheat oven to 375 degrees.

Rub roast with pepper. Do not add salt until ready to serve. Place roast on a rack in an oven roasting pan, rib side down. Roast for 1 hour. Turn oven off but DO NOT OPEN OVEN! Allow roast to remain in oven for a minimum of 3 hours and maximum of 5 hours.

After the 3-5 hours, turn oven to 375 degrees and roast an additional 30 to 45 minutes. DO NOT OPEN OVEN UNTIL ALL BAKING HAS BEEN COMPLETED. Remove roast and allow to stand for 15 minutes before slicing.

This was my first time cooking a rib roast. My roast was 7 pounds so I left the roast in for 4 hours and went 40 minutes for the finish. After letting it rest for the 15min, we had a PERFECT medium all the way across with no brown ring. This was an early mothers day dinner, and it really made me look like a hero!
