HAM WITH RED - EYE GRAVY 
2 tbsp. butter
1 fully cooked ham steak, 1/2" thick
1 c. coffee

Heat large skillet until hot, add butter. Add ham. Saute 8-10 minutes on each side. Transfer to heated platter. Pour off any fat remaining in skillet. Add coffee, cook over high heat for 1 minute, scraping up any bits clinging to bottom of pan. Pour gravy over ham and serve with grits.
