This is a very simple side dish. Great at Thanksgiving. Even people that don't like peas like this dish! 2 cups shelled pistachio nuts 1 cup (2 sticks) butter 2 (16 oz.) bags frozen peas 4 cups water 1 1/2 cup bread crumbs (Progresso or 4C) In a food processor, pour in all the shelled Pistachio nuts and chop the nuts. In a small skillet, melt butter and add chopped Pistachio nuts. Brown nuts for a minute or two, then add the bread crumbs. In a small pot, boil 4 cups of water and cook the peas for a minute or two (peas don't take very long). Strain the water and put peas back in small pot. Fold in bread crumb/pistachio mixture (make sure not to damage the peas... you don't want pea soup) and serve. Enjoy! Submitted by: Ryan Busby |
