SAUCE MEUNIERE 
2 tbsp. butter
1 tbsp. flour
1/4 tsp. salt
1/4 tsp. pepper
1/2 c. cream
1/2 c. rich chicken stock
4 fresh mushrooms, chopped fine
2 tbsp. cream
1 tbsp. fresh Parmesan cheese, grated

Melt 1 tablespoon butter. Blend in flour until smooth. Add salt, pepper, cream and chicken stock and stir until the sauce begins to thicken. Add chopped mushrooms and simmer gently for 5 minutes, stirring occasionally. Strain. Return to heat. Add 2 tablespoons cream and 1 tablespoon butter. Mix well and add Parmesan. Serve immediately.
