GOLDIA'S SCALLOPED CHICKEN 
1 lg. hen
1 c. chicken fat or 1/2 c. butter
1/2 c. flour
2 c. chicken broth (from hen)
2 c. milk
12 oz. wide noodles
1 lb. Velveeta cheese food, cubed
1 can cream of mushroom soup
1 sm. can pimentos
Approximately 4 slices white or wheat bread (cubed)

Cook hen in salted water. Pick lean meat from bones and fat and skin. Skin can be ground up and mixed with bread crumbs for topping. Make white sauce with chicken fat (or butter), flour, broth (from hen), and milk. Cook noodles in salted water until just done, don't overcook. Rinse with cold water so they won't stick together. Drain noodles well. Mix noodles, chicken, cheese, mushroom soup and pimentos into white sauce. Pour into 13 x 9 x 2 inch pan. Put bread crumbs (mixed with chicken skin, if desired) on top and bake one hour at 300 degrees.
