SAUSAGE ENCHILADA'S 
1/2 lb. sausage
1 tbsp. green chilies
1/4 c. chopped onion
1 c. taco sauce
1 c. grated cheese
5 tortillas
Oil

Brown sausage, breaking up; drain. Stir in chilies and onion. Warm taco sauce. Heat oil; dip each tortilla in hot oil for 15 to 20 seconds, then dip into warm taco sauce. Place 2 tablespoons sausage mixture on each tortilla; sprinkle with cheese. Roll up; place, seam side down, in baking dish. Pour remaining taco sauce over enchiladas; sprinkle with remaining cheese. Bake at 325 degrees 25 minutes.
