POTATO SALAD | |
6 med. potatoes (2 lb.) 1 c. celery, thinly sliced 1/2 c. onion, finely chopped 1/3 c. sweet pickle relish 1 1/4 c. Hellmann's mayonnaise 2 tsp. sugar 2 tsp. celery seed 2 tsp. vinegar 2 tsp. prepared mustard 1 1/2 tsp. salt 2 hard boiled eggs, chopped Boil potatoes for 30 minutes, or till tender, then drain well. Peel and cube the potatoes; add celery, onion, and relish. Separately, combine the mayonnaise, sugar, celery seed, vinegar, mustard, and salt. Now add the mayonnaise mixture to the potato mixture and fold in the chopped eggs. Cover and chill. Serves 8. |
