POTATO SOUP | |
8 big potatoes Chicken bouillon Sm. pieces (tiny) of 2 pork sausage or cut up bacon pieces, about 2 to 3 strips 1 stick butter 1/2 to 3/4 c. flour Milk Salad Supreme, Mrs. Dash, salt, pepper, parsley flakes - whatever you want to add Dice the potatoes into small bits, 1/4 inch or so. Put diced potatoes in large pot and slightly cover with water. Boil about 15 minutes. DO NOT DRAIN. Pour milk into potato pot and almost fill the pot. Add 3/4 teaspoons bouillon. Add the bits of chopped sausage or bacon (fry first to get out grease). In a frying pan, melt 1 stick butter and stir in the flour. Stir for 2 minutes. Pour this mixture into the potato water. Sprinkle in salad supreme, salt, pepper, parsley, etc. Turn to simmer and keep mixing with large wooden spoon until thick. Next day, may have to add milk because it's so thick after refrigeration. If mixture thickens after refrigeration, add milk. |
