RAISIN AND NUT MUFFINS | |
1 c. sugar 1 c. applesauce 1/4 c. oil 3 egg whites 3 tbsp. buttermilk 1 c. white flour 1 c. whole wheat flour 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1/2 c. chopped walnuts 1 c. raisins Combine sugar, applesauce, oil, egg whites and milk. Mix thoroughly. Add flours, baking soda, baking powder and spices. Combine until well mixed. Stir in nuts and raisins. Spoon into lightly oiled or paper-lined muffin tins. Bake at 350 degrees for 20-25 minutes. Be careful not to overbake, as they will become dry. |
