GREENFIELD TEA CAKE 
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1/2 c. sugar
1/2 c. butter
1 c. milk
1 egg, beaten
1/2 c. raisins (optional)

Combine dry ingredients. Cut in shortening until mix resembles cornmeal. Add raisins. Add egg and milk and mix well. Turn into a 9 x 9 inch or 13 x 9 inch pan. Sprinkle with topping or streusel and bake at 375 degrees until brown.

TOPPING:

3/4 c. sugar
Cinnamon to taste, 1 or 2 tsp.
Butter

Combine and sprinkle over unbaked cake, dot with butter.

STREUSEL:

1 c. flour
1/3 c. sugar
1 stick butter, softened
1 tsp. nutmeg
1 or 2 tsp. cinnamon

Combine all ingredients.
