GREEN CHILI STEW 
4 lbs. sirloin or round steak
1 lb. roasted and chopped green chilies
2 med. red onions
4 or 5 fresh tomatoes, peeled and chopped
2 tsp. salt
1 tsp. oregano
1/2 tsp. thyme
1 tsp. pepper
1/4 c. olive oil
2 qts. boiling water

1. In large pan saute onions and 2 cloves garlic, crushed, in olive oil until onions are tender.

2. Cube the steak and add to onions. Lightly sear the steak.

3. Stir in seasonings. Add 1 clove garlic, crushed, to chopped green chilies. Stir green chilies into meat mixture.

4. Add chopped tomatoes and boiling water. Cover and simmer on low for 20 minutes. Turn off heat and let stand for 10 minutes. Serve with pinto beans and flour tortillas, blue corn tortillas or corn chips. If you want spicy, just add a chopped jalapeno pepper. Serves 6 to 8 people.
