CARAMEL APPLE SALAD 
1 c. sugar
2 tbsp. flour
2 eggs, slightly beaten
2 tbsp. lemon juice
1 (20 oz.) can crushed pineapple, drained
6 to 8 apples, diced and unpeeled
1 (12 oz.) pkg. Cool Whip
2 c. dry roasted peanuts, chopped

Cook sugar, flour, eggs, and lemon juice until thick. Cool. Combine pineapple and Cool Whip. Stir in apples and 1 1/2 cups peanuts. Then stir in the cooled mixture, and top with remaining crushed peanuts.
