CREAMY CORNBREAD 
1 c. cornmeal
1 c. buttermilk
2 tbsp. shortening
1 1/2 tsp. baking powder
1 c. & tbsp. boiling water
2 eggs
1 tsp. salt
1/4 tsp. baking soda

Pour water over cornmeal. Add milk and stir. Add eggs and beat. Add shortening which has been melted in pie plate. Mix salt, baking powder and baking soda and add to mixture. Pour into pie plate used for melting shortening. Bake 30 minutes at 400 degrees.

If plain milk is used, add 2 1/2 teaspoons of baking powder and no baking soda.
