QUICHE LORRAINE 
1 partially baked pie shell (8 minutes)
4 lg. eggs
8 oz. sour cream
3 oz. bleu cheese
8 oz. grated Swiss cheese
Pinch each of salt and pepper

Blend all. Pour into pie shell. Bake at 375 degrees for 30 to 40 minutes. The following can be added before baking if desired: crumbled bacon, ham, shrimp, green pepper, mushrooms, pimento or whatever sounds interesting at the moment, or leave plain.

Can be eaten right away with a spinach salad and white wine. May also be cooled and frozen and reheated with foil over it. Can be served cold as an hors d'ouevre.
