BUTTERLE KUFTA 
2 c. (Coffee size) fine ground wheat (bulgar)
1 green pepper, diced fine
1 sm. onion, diced fine
1 (#1) can crushed tomatoes, no puree
2 tbsp. tomato paste
Salt and pepper
3/4 stick butter

In a large open bowl, mix bulgar with 1 cup cold water. Make sure all bulgar is wet. Let is stand.

In a large deep skillet, saute onion and green pepper with butter (do not burn onion); add tomatoes and tomato paste, salt and pepper (to taste) and let simmer on low heat for 15 minutes. Pour tomato mixture into bulgar and mix well again making sure all bulgar is covered.

Cover with clean dish towel and let it stand for 15 minutes. Knead mixture for a few minutes (until mixture sticks together). Mound on a plate or make into balls. Serve with tossed salad.
