COCONUT CAKE 
1 pkg. yellow cake mix
1 (3 oz.) instant vanilla pudding
4 eggs
1/2 c. oil
2 c. coconut
1 c. pecans
1 1/3 c. water

Blend cake mix, pudding, water, eggs, and oil in bowl. Stir in coconut and nuts. Pour into three 8 inch pans. Bake at 350 degrees for 30 minutes.

FROSTING:

2 tbsp. butter
18 oz. cream cheese
1 1/2 c. coconut
3 1/2 c. powdered sugar
1 1/2 tsp. vanilla
2 tsp. milk

Beat together well, frost each layer.
