CHUTNEY GLAZED CHICKEN | |
6-8 pieces of chicken, your favorite cut 1/2 c. butter Salt and pepper 2 1/2 c. water 1 c. chutney 1 tsp. curry powder 2 tbsp. cornstarch 1-2 pkg. curried rice mix - enough to feed your family 1 pkg. frozen peas - enough for your family Brown chicken in butter and season with salt and pepper. Put in shallow baking dish skin side up. Add water, chutney, and curry powder to drippings. Bring to boil and pour over chicken. Cover and bake at 325 degrees for 30 minutes. Uncover and bake 30 minutes basting several times. Thicken juices with cornstarch and cold water. Bake 5 more minutes. Prepare rice and peas as package directions. Serve rice in ring with peas in center. |
