SWEET POTATOES WITH MARSHMALLOWS 
2 lb. sweet potatoes or yams, cooked, drained and peeled
1/4 c. butter
1/4 c. packed brown sugar
1/2 tsp. salt
Dash of ground cinnamon
1/3 c. light cream or milk
8 marshmallows, halved

Mash potatoes; stir in butter, brown sugar, salt, and cinnamon. Add cream, beating until fluffy. Turn into a shallow 1 1/2 quart casserole. Bake in a 350 degree oven for 20-25 minutes. Top with marshmallows; broil 1-2 minutes or until marshmallows are browned. Makes 8 servings.
