RICE AND POTATO SOUP 
3 tbsp. salt pork
3 tbsp. olive oil
1/2 onion
2 tbsp. chopped parsley
2 qt. beef broth
1 1/2 lb. potatoes, peeled and sliced thin
1 c. rice
Salt and pepper

Saute salt pork, oil, onion, parsley in large saucepan. Add potatoes and 1 cup broth, simmer 15 minutes. Add rest of broth, salt, pepper. Add rice when broth starts to boil. cook for 15-18 minutes. Skim part of fat from top.
