GREEK CHICKEN 
1 lg. fryer, cut up
1 bell pepper, chopped
1 stalk celery, chopped
2 c. rice
1/2 can Ro-Tel tomatoes
1 tbsp. salt
1/2 stick butter
1 c. chopped onion
2 garlic buttons, or 2 tsp. garlic salt
1 can cream of chicken or mushroom soup

Melt butter in large pan. Add chicken stirring until hot. Mix all other ingredients, then add to chicken. Add 2 cans of water or broth. Mix well. Cook 45 minutes in 400 oven or on top of stove at very low heat.
