CHOP SUEY 
3/4 c. butter
1 1/2 c. diced lean pork
1 c. onions, cut fine
1 tsp. salt
1/8 tsp. pepper
1 c. chopped celery
1 c. hot water
1 c. bean sprouts, drained
1 (8 oz.) can mushrooms
1 tbsp. brown sauce

THICKENING:

1/3 c. cold water
2 tbsp. cornstarch
1 tsp. sugar
2 tsp. soy sauce

Melt butter, add meat, stir and sear quickly (without browning). Add onions and fry for 5 minutes. Add celery, salt, pepper and hot water. Cover and cook for 5 minutes. Add bean sprouts, mushrooms, mix thoroughly and bring to a boil. Add thickening and browning sauce.
